Mexican Street Corn ‘Esquites’ Recipe

Commonly known as ‘Elote’ when prepared on the cob and ‘Esquites’ when prepared off the cob, which is what we’ve done here. This recipes uses 64 ounces of corn to be used for an event, party or large gathering. Modify recipe to suit your needs for smaller family dinners.

Ingredients:

  • 64 ounces frozen corn

  • 2 C mayo

  • 2 C cotija cheese

  • Juice of 4 limes

  • Zest of 2 limes

  • 1 tbsp dark chile powder

  • 1/2 tbsp cayenne

  • 2 tbsp Kosher salt

Saute corn until lightly browned and then cool completely on a sheet tray. Once cooled, combine cheese, seasonings and lime juice and combine. Serve as a side with dinner.
