Fiesta Style Sweet Potatoes
Let’s make fiesta stuffed sweet potatoes — the ultimate cozy weekend dinner. We’re gonna start with oven-baked sweet potatoes, cook up for about 45 minutes at 350 degrees.
Rainy day outside? Perfect. These are hearty, fun, and guaranteed to hit the spot.
Ingredients:
1# ground beef
5-6 medium sweet potatoes
1 can corn
1 can black beans
1 can diced tomatoes
1 tbsp garlic
1 tbsp dry dill
1 tbsp dry thyme
1 tbsp dry parsley
1/2 an onion (diced)
Salt to taste
1/2 C shredded cheddar
I like to keep additional toppings on hand to zhuzh things up — today I made a quick cucumber-avocado salad and, of course, my trusty pico de gallo. Kids love this because they get to choose their own toppings — and honestly, so do I.
Finish it off with whatever you love: sour cream, guac, hot sauce — the works. Cozy, colorful, and so delicious.
