For the Cake:

  • ¾ cup sugar

  • 1 ½ sticks (¾ cup) unsalted butter, melted

  • 2 large eggs

  • 1 cup apple cider

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • ¼ teaspoon salt

For the Streusel Topping

  • 1 cup brown sugar

  • 1 cup all-purpose flour

  • ½ cup (1 stick) butter, melted or softened

  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line an 8x8-inch (or 9x9-inch) baking pan with parchment paper.

  2. Mix the wet ingredients:
In a large bowl, whisk together the melted butter, sugar, and eggs until smooth. Add the apple cider and vanilla, whisking until fully combined.

  3. Combine the dry ingredients:
In a separate bowl, mix flour, baking powder, cinnamon, and salt.

  4. Bring it together:
Add the dry ingredients to the wet mixture, stirring until just combined — don’t overmix!

  5. Make the streusel:
In a small bowl, mix brown sugar, flour, softened butter, and cinnamon until a crumbly mixture forms. Don’t be afraid to use your hands.

  6. Assemble and bake:
Pour the batter into your prepared pan and evenly sprinkle the streusel over the top.

  7. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.

  8. Cool and serve:
Let the coffee cake cool slightly before slicing. Serve warm with coffee, or wrap tightly once cooled for gifting.
